Overview
Kursen erbjuder kunskaper som ger teoretisk insikt och praktisk erfarenhet om drycker och sommelierhantverk, på grundläggande nivå. Vi tränar på att metodiskt beskriva, bedöma och analysera dryckers karakteristik, samt att relatera dryckers egenskaper till stil, kvalitet och hållbarhet. Genomgående i kursen ingår moment som övar studenten att artikulera dryck med utgångspunkt i vetenskap, med fokus på yrkesmässigt sommelierhantverk genom estetiskt gestaltande. I kursen ingår en introduktion till övergripande frågor om ekologisk, ekonomisk och social hållbarhet, samt till FN:s 17 globala hållbarhetsmål.
