Overview
I denna kurs diskuterar vi näringsämnens (kolhydrater, fetter, proteiner) egenskaper, deras upptag samt omsättning i kroppen och konsekvenserna av överintag eller bristfälligt intag. De fysiologiska mekanismerna bakom hunger och mättnad, samt kopplingar mellan kost och fysisk aktivitet, omfattas också. Relativt stor plats ägnas i kursen åt vitaminer och mineraler, samt bristsjukdomar kopplade till dessa. Kursens fokus ligger på fysiologiska och biokemiska mekanismer och samband, men även dagsaktuella frågor om kost och hälsa (på senare år tillsatser t ex) speglas genom dubbla seminarieuppgifter – en inriktad mot myter om maten och en annan som fokuserar på aktuella forskningsrön.
